Orange & fennel salad with orange vinaigrette

Delightful salad with heavenly pairing of orange and fennel.
Ingredients:
  • 4 oranges
  • 600g fennel
  • 1 medium red onion, finely sliced
  • 62.50 ml loosely packed parsley leaves
  • 100mls olive oil
  • 80mls (1/3 cup) fresh orange juice
  • 5.90 gm wholegrain mustard
  • Salt & ground black pepper
Instructions:
  • Grate the zest of 1 orange finely and set aside. Peel and separate all oranges into segments.
  • Combine the reserved orange rind, olive oil, orange juice, mustard, salt, and pepper in a screw-top jar. Shake vigorously to create the orange vinaigrette.
  • Combine the orange segments, fennel, and red onion in a bowl. Transfer to a serving plate or bowl, sprinkle with parsley, and drizzle with the orange vinaigrette.
