Indulge in a quick and delicious carrot cake using a mix with a flavor boost for a delightful treat.
Ingredients:
  • 470g pkt Green's carrot cake mix
  • 1 egg
  • 80ml vegetable oil
  • 200g dessert figs, finely chopped
  • 2 tsp finely grated orange rind
  • 60g butter
  • 81.00 gm maple syrup
  • Orange zest, to decorate
Instructions:
  • Preheat your oven to 180°C and line a 20cm square cake pan with non-stick paper.
  • Combine the cake mix, egg, oil, and 2/3 cup (150ml) water in a large bowl until thoroughly blended using a wooden spoon.
  • Gently mix in the figs and orange rind until evenly distributed. Transfer the batter to the pan and bake for 45 minutes, or until a skewer comes out clean when inserted in the center. Allow the cake to rest for 10 minutes before turning it out onto a wire rack to cool fully.
  • Combine the icing, butter, and maple syrup in a small bowl. Mix until smooth using a wooden spoon. Spread the mixture over the cake and sprinkle with orange zest for decoration.
