Citrus-Kissed Fig Thumbprints

Award-winning 2010 sugar cookies with lemon, orange, and fig preserves.
Ingredients:
  • 3 tablespoons Gold Medal™ all-purpose flour
  • 1/2 cup butter or margarine, melted
  • 1 teaspoon grated lemon peel
  • 1 teaspoon grated orange peel
  • 1/2 teaspoon vanilla
  • 1/3 cup fig preserves
  • 1 teaspoon coarse sugar, if desired
Instructions:
  • Preheat oven to 375°F. Combine cookie mix, flour, melted butter, lemon peel, orange peel, vanilla, and egg in a large bowl, stirring until a soft dough forms.
  • Roll the dough into 1-inch balls, spacing them 2 inches apart on an ungreased cookie sheet. Press your thumb or the handle of a wooden spoon into the center of each cookie to create an indentation, then fill each with about 1/4 teaspoon of preserves.
  • Bake for 7 to 9 minutes until edges turn light golden brown. Let cool for 2 minutes, then transfer to a wire rack. Optionally, sprinkle with coarse sugar. Allow to cool completely before storing tightly covered at room temperature.
