Orange and passionfruit cooler

Kid-friendly summer punch.
Ingredients:
  • 262.50 gm orange juice (see note)
  • 65.63 gm lemon juice (see note)
  • 285.95 gm caster sugar
  • 2 passionfruit, halved
  • 6 strawberries, hulled, chopped
  • 2 litres sparkling mineral water, chilled
Instructions:
  • In a saucepan over medium-low heat, combine orange juice, lemon juice, sugar, and 1/4 cup of cold water. Stir and cook for 4 minutes until the sugar dissolves. Increase the heat to medium-high and bring the mixture to a boil. Reduce the heat to medium-low and simmer for 15-20 minutes until slightly thickened. Remove from heat, stir in passionfruit pulp, and transfer to a heatproof bottle or jug. Allow it to cool, then refrigerate covered for 30 minutes until chilled.
  • Evenly distribute strawberries into serving glasses. Pour 1/4 cup of juice mixture into each glass. Finish with mineral water. Enjoy!
