Delicious orange loaf cake with brown sugar, oats, chia seeds, flax seeds, and vibrant citrusy notes from orange juice and zest.
Ingredients:
  • 1.25 cups all-purpose flour
  • 1.25 cups light brown sugar
  • 0.25 cup rolled oats
  • 1 tablespoon ground chia seeds
  • 1 tablespoon flaxseed meal
  • 3 eggs
  • 2 oranges, juiced and zested
  • 5 ounces unsalted butter, melted
  • 2 tablespoons milk, or as needed
Instructions:
  • Preheat the oven to a toasty 350°F (175°C). Prepare a loaf pan by greasing and lining it with parchment paper.
  • In a large bowl, blend together flour, sugar, oats, ground chia seeds, and flaxseed meal until fully combined.
  • Lightly whisk eggs in a separate bowl, then blend in orange juice and zest. Beat in butter and milk. Gradually combine the egg mixture with the flour mixture, whisking until well mixed. Pour the batter into the prepared loaf pan.
  • Bake in the oven at the correct temperature until a toothpick comes out clean, about 40 to 50 minutes. Allow to cool on a wire rack for 5 minutes, then gently loosen the edges with a knife and carefully flip onto a serving plate or cooling rack. Let it cool completely.
