Orange Cappuccino Cake

Indulge in the perfect blend of rich chocolate and coffee flavors, balanced with a refreshing hint of orange zest in this delicious cake.
Ingredients:
  • 2 oz sweet baking chocolate
  • 1/2 cup water
  • 1/4 cup orange cappuccino-flavored instant coffee mix
  • 1 tablespoon grated orange peel
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup butter or margarine, softened
  • 2 cups granulated sugar
  • 4 eggs, separated
  • 1 cup buttermilk
  • 1/2 cup butter or margarine
  • 2 tablespoons orange cappuccino-flavored instant coffee mix
  • 8 cups powdered sugar
  • 1/4 cup milk
  • 1/4 cup orange juice
Instructions:
  • Preheat oven to 350°F. Grease and flour a 13x9-inch pan. Melt 2 ounces of chocolate with water in a small saucepan over low heat, stirring frequently. Add 1/4 cup of dry coffee mix and orange peel, then let it cool slightly. In a medium bowl, combine flour, baking soda, and salt; set aside.
  • In a large bowl, use an electric mixer to beat 1 cup of butter and granulated sugar until fluffy. Add egg yolks one at a time, then mix in chocolate mixture and vanilla. Alternate adding the flour mixture and buttermilk, beating until smooth after each addition.
  • In a medium bowl, whip egg whites with an electric mixer until stiff peaks form. Gently fold them into the batter, then pour the mixture into the pan.
  • Bake for 42 to 45 minutes until the top springs back when lightly touched. Allow to cool completely for about 1 hour.
  • In a medium saucepan, melt 2 ounces of chocolate and 1/2 cup of butter over low heat, stirring often until smooth. Add 2 tablespoons of dry coffee mix. In a large bowl, beat together powdered sugar, milk, orange juice, and melted chocolate mixture until fluffy. Spread frosting evenly over cake.
