Delicious orange crunch truffles, perfect for gift-giving or indulging.
Ingredients:
  • 70.95 gm caster sugar
  • 63.13 gm thickened cream
  • 2 x 180g dark chocolate block
  • 21.00 gm orange juice
  • 1 tsp finely grated orange rind
  • 50g white chocolate block, chopped
  • Yellow and red food colouring
Instructions:
  • Prepare a tray lined with baking paper. In a small saucepan over low heat, combine sugar and 1 1/2 tablespoons of warm water, stirring for 5 minutes until the sugar dissolves. Increase heat to medium and bring to a boil. Let it cook without stirring for 8 to 10 minutes until it turns into a deep golden color. Remove from heat and pour the mixture onto the prepared tray. Allow it to set before proceeding.
  • In a microwave-safe bowl, mix cream and half of the dark chocolate. Microwave uncovered on MEDIUM (50%) for 2 to 3 minutes, stirring every minute with a metal spoon until melted and smooth. Add orange juice and rind, then let it cool for 20 minutes.
  • Break the toffee into chunks and place them in a small food processor. Pulse until you achieve a coarse crumb. Mix it into the chocolate mixture, stir well to combine, cover, and refrigerate for 3 to 4 hours until it becomes firm.
  • Prepare a tray lined with baking paper. Roll 2-teaspoon portions of chocolate mixture into balls and place them on the tray. Freeze until firm.
  • Place the rest of the dark chocolate in a microwave-safe bowl. Microwave uncovered on MEDIUM (50%) for 2 to 3 minutes, making sure to stir every minute with a metal spoon until the chocolate is melted and smooth. Dip the truffles using a fork into the chocolate, shaking off any excess. Return the truffles to the tray and refrigerate until set.
  • Place white chocolate in a microwave-safe bowl and microwave on MEDIUM (50%) for 1 minute, stirring halfway until melted and smooth. Add orange food colouring, transfer to a plastic bag, snip off a corner, pipe chocolate over truffles. Refrigerate for 20 minutes until set. Serve.
