Tangy orange drizzle cake, ideal for any time of day.
Ingredients:
  • 1 thin-skinned orange (preferably seedless Valencia), plus zest of 1 large orange to garnish
  • 250g unsalted butter, melted
  • 300g self-raising flour
  • 440g caster sugar
  • 4 eggs
  • 40g butter
  • 225g icing sugar
  • Juice of 1/2 orange
  • Squeeze of lemon juice
Instructions:
  • Preheat your oven to 170C and generously grease an 11cm x 24cm loaf pan.
  • Finely chop the whole orange, discarding seeds. Process in a food processor until finely chopped. Add butter, flour, caster sugar, and eggs, then process until smooth. Pour into pan and bake for 40 minutes until golden and a skewer comes out clean. Let it rest in the pan for 5 minutes, then cool on a wire rack.
  • In a saucepan over low heat, melt butter and stir in icing sugar, orange juice, and lemon juice until smooth. Let the icing cool slightly before drizzling it over the cake to cascade down the sides. Finish by sprinkling zest on top before serving.
