Tangy orange-glazed baked chicken.
Ingredients:
  • 4 skinless, boneless chicken breast halves
  • 2 tablespoons prepared Dijon-style mustard
  • 0.5 cup chopped onion
  • 0.5 cup packed brown sugar, divided
  • 2 cups orange juice
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) for the perfect cooking temperature.
  • In a 9x13 inch baking dish, lay the chicken pieces. Evenly spread mustard over the chicken and top with chopped onions. Sprinkle with 1/4 cup of brown sugar, then pour in enough orange juice to cover the chicken. Finish by placing knobs of butter over the top before baking.
  • After baking for 45 minutes, transfer the leftover sauce from the baking dish to a saucepan. Sprinkle the chicken with the remaining 1/4 cup brown sugar and place it back in the oven.
  • In a saucepan, gently incorporate flour into the sauce. Stir in any remaining orange juice and simmer over high heat until the sauce reaches a thick consistency. Take the chicken out of the oven and transfer it to a serving platter. Drizzle the sauce over the chicken or serve it in a gravy boat. Enjoy your meal!
