Citrus-infused quick bread with fresh orange juice and zest, topped with a sweet orange glaze.
Ingredients:
  • 2 teaspoons baking powder
  • 0.5 cup chopped walnuts
  • 0.5 teaspoon salt
  • 1 cup white sugar
  • 0.5 cup margarine
  • 0.5 cup fresh orange juice
  • 1 tablespoon grated orange zest
  • 0.5 cup orange juice
  • 0.25 cup white sugar
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x5-inch loaf pan. Combine flour, baking powder, nuts, and salt in a bowl, stirring until well mixed.
  • In a separate large bowl, cream together 1 cup sugar and butter until fluffy. Gradually add eggs one at a time. Mix in 1/2 cup orange juice and orange zest. Fold in the flour mixture until just combined, then transfer the batter into the prepared loaf pan.
  • Bake the loaf in the preheated oven for about 1 hour, or until a toothpick inserted into the center comes out clean. Remove the loaf from the oven, leaving it in the pan.
  • In a small saucepan, blend 1/2 cup of orange juice with 1/4 cup of sugar over heat until the sugar dissolves. Drizzle the glaze over the warm loaf. Allow the loaf to rest in the pan for 10 minutes before transferring it to a cooling rack.
