Orange loaf with creme fraiche frosting

Tangy loaf with fluffy frosting, perfect for tea time.
Ingredients:
  • 185g butter, softened
  • 215.00 gm caster sugar
  • 2 1/2 tsp finely grated orange rind
  • 3 eggs
  • 300.00 gm self-raising flour, sifted
  • 42.00 gm orange juice
  • 200ml creme fraiche
  • 126.25 gm thickened cream
  • 37.50 gm icing sugar mixture
  • 1/2 tsp finely grated orange rind
  • Orange zest, to decorate
Instructions:
  • Preheat the oven to 180C/160C fan-forced and generously grease a 7cm-deep, 11cm x 21cm loaf pan.
  • With an electric mixer, whip together butter, sugar, and 2 teaspoons of orange zest until airy. Gradually add eggs one by one, beating well after each addition. Fold in flour, orange juice, and 1/2 cup of creme fraiche.
  • Pour mixture into pan and ensure the surface is evenly smoothed out. Bake for 1-1.10 hours until a skewer inserted in the center comes out clean. If the top browns too quickly, loosely cover with foil. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Whip cream, icing sugar, and remaining orange rind with an electric mixer until firm peaks form. Gently fold in the rest of the creme fraiche until combined. Spread the frosting over the loaf, sprinkle with zest, and serve.
