Moist pumpkin loaf made with ground whole orange, perfect with orange butter or cream cheese spread or enjoyed plain.
Ingredients:
  • 1 large orange
  • 0.33333334326744 cup butter, softened
  • 1.3333333730698 cups white sugar
  • 1 cup canned pumpkin
  • 0.33333334326744 cup water
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 cup chopped walnuts
  • 0.5 cup chopped raisins
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while you generously grease a 9x5 inch loaf pan.
  • Cut the orange into wedges, remove seeds, and place the whole orange in a food processor. Pulse until finely chopped, then set aside.
  • Combine butter and sugar in a large bowl until smooth. Add eggs one at a time, then mix in pumpkin, water, and ground orange. In a separate bowl, mix flour, baking soda, baking powder, salt, cinnamon, and cloves. Gently fold dry ingredients into the batter until combined. Stir in nuts and raisins. Transfer mixture into loaf pan.
  • Bake in the preheated oven for 1 hour, or until a toothpick inserted near the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
