Delicious pumpkin-orange muffins with prunes - perfect for any time of day!
Ingredients:
  • 3 cups all-purpose flour
  • 0.5 cup white sugar
  • 2 tablespoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 cup moist prunes, chopped
  • 1.5 cups pumpkin puree
  • 1 cup orange juice
  • 0.75 cup milk
  • 2 oranges, zested
  • 1 teaspoon vanilla extract
  • 1 tablespoon confectioners' sugar, or as needed
Instructions:
  • Preheat the oven to 350°F and prepare two 12-cup muffin trays by greasing them or lining with paper liners.
  • In a large bowl, blend together the flour, sugar, baking powder, cinnamon, and salt. Fold in the prunes.
  • Combine pumpkin, orange juice, milk, eggs, orange zest, and vanilla extract in a separate bowl. Gently mix into the flour mixture, then stir in the melted butter until well combined.
  • Spoon the batter into the muffin cups that have been prepared.
  • Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • After baking, transfer the muffins to wire racks to cool for 20 to 30 minutes. Sprinkle with confectioners' sugar before serving.
