Fall-inspired pumpkin bread with orange zest, topped with a vibrant lemon-orange glaze.
Ingredients:
  • 3.5 cups all-purpose flour, sifted
  • 3 cups white sugar
  • 2 tablespoons grated orange zest
  • 2 teaspoons baking soda
  • 2 teaspoons ground nutmeg
  • 2 teaspoons ground cinnamon
  • 1.5 teaspoons salt
  • 0.5 teaspoon ground ginger
  • 4 eggs, beaten
  • 2 cups pumpkin
  • 0.75 cup canola oil
  • 0.66666668653488 cup milk
  • 0.25 cup orange juice
  • 0.66666668653488 cup confectioners' sugar
  • 2 teaspoons lemon juice, or as needed
  • 2 teaspoons orange juice
  • 1 cinnamon stick, freshly grated
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease and lightly dust 2 loaf pans.
  • In a bowl, mix together flour, white sugar, orange zest, baking soda, nutmeg, cinnamon, salt, and ginger until well combined.
  • In a separate bowl, whip eggs with an electric mixer until soft peaks form. Mix in pumpkin, oil, milk, and 1/4 cup orange juice until well combined. Gradually mix in the flour mixture in 2 additions, ensuring thorough blending each time. Pour the batter into the prepared pans.
  • Bake in the preheated oven for about 1 hour or until a toothpick inserted in the center comes out clean. Let the loaves cool for about 5 minutes, then transfer them to a rack to finish cooling for another 20 minutes.
  • Combine confectioners' sugar, lemon juice, and 2 teaspoons orange juice until you achieve your preferred consistency. Pour over the bread and sprinkle with freshly grated cinnamon.
