Tender chicken drizzled with tangy orange mango sauce.
Ingredients:
  • 1 lemon, juiced
  • 3 tablespoons olive oil
  • 4 skinless, boneless chicken breast halves
  • 0.125 teaspoon ground thyme
  • salt and freshly ground black pepper to taste
  • 1 cup orange juice
  • 1 mango - peeled, seeded, and sliced
  • 0.25 teaspoon ground ginger
  • 0.125 teaspoon ground cinnamon
Instructions:
  • In a medium skillet over medium heat, warm the olive oil. Add chicken breast halves and cook for 5-10 minutes on each side until cooked through. Season both sides with thyme, salt, and pepper. Remove from heat and set aside.
  • In a skillet over medium heat, warm the lemon juice and deglaze the pan. Add orange juice, mango, ginger, and cinnamon. Cook over high heat, stirring constantly, for 4 to 5 minutes until thickened. Pour over the cooked chicken breast halves before serving.
