Impress with a French mille-feuille: syrupy oranges, decadent cream. Perfect for dinner parties.
Ingredients:
  • 4 (about 800g) navel oranges, peeled, segmented
  • 125ml (1/2 cup) yellow-box honey
  • 1/4 tsp ground cardamom
  • 1 sheet (25 x 25cm) ready-rolled reduced-fat puff pastry (Pampas brand)
  • 80ml (1/3 cup) thickened cream
  • Icing sugar, to dust
Instructions:
  • 1. Preheat your oven to 200°C. In a medium saucepan, combine the orange, honey, and cardamom. Bring to a boil over medium-high heat. Let it simmer on low for 20 minutes until the syrup thickens slightly. Remove from the heat and allow it to cool for 5 minutes before using.
  • Cut the pastry into eight 6 x 12cm rectangles, then place them on a baking tray. Bake in a preheated oven for 10-12 minutes, or until they are golden brown and puffed.
  • Whip the cream in a bowl using an electric beater until soft peaks form. Lay half of the pastry rectangles on serving plates and gently press them down. Spread orange compote and cream over the pastry. Add the remaining pastry rectangles on top and sprinkle with icing sugar. Serve immediately for a delicious treat.
