Indulge in zesty syrupy orange friands, a delightful treat made from fresh oranges. Pair with whipped cream for a touch of decadence.
Ingredients:
  • 3 navel oranges
  • 187.50 gm pure icing sugar, sifted
  • 125.00 ml plain flour, sifted
  • 100.00 gm ground almonds
  • 160g butter, melted, cooled
  • 4 eggwhites
  • 4.40 gm vanilla essence
  • 161.25 gm caster sugar
Instructions:
  • 1. Start by simmering a whole orange in a saucepan filled with cold water until it becomes soft, which should take about 30 to 45 minutes. 2. Once the orange is ready, let it cool down before roughly chopping it, skin, seeds, and all. 3. Transfer the chopped orange into a food processor and finely chop it to yield 3/4 cup of orange pulp.
  • Preheat oven to 200°C and generously grease 12 1/2-cup friand moulds or muffin pans. Arrange them on a baking tray.
  • In a large bowl, mix together icing sugar, flour, and almonds. Add orange pulp and butter, then stir until fully combined.
  • Whisk egg whites and vanilla until frothy in a jug. Combine with flour mixture. Mix until well combined. Divide mixture evenly into moulds. Bake for 15-18 minutes until small peaks form and a skewer comes out clean. Let it rest for 3 minutes in the moulds, then transfer to a wire rack to cool.
  • Grate the zest from the 2 oranges and squeeze out the juice. Combine the zest, juice, and sugar in a small saucepan. Cook over low heat, stirring, until the mixture boils. Lower the heat and simmer until it thickens slightly. Let it cool before using.
  • Serve the friands on plates and generously drizzle with orange syrup before enjoying.
