Zesty bite-sized cakes, perfect for a tasty treat.
Ingredients:
  • Cooking oil spray, to grease
  • 230g (1 1/2 cups) pure icing sugar, sifted
  • 185g dairy-free margarine, melted
  • 100g (1 cup) almond meal
  • 75g (1/2 cup) gluten-free plain flour
  • 6 egg whites, lightly whisked
  • 20.00 ml finely grated orange rind
  • 1 orange
  • 215g (1 cup) caster sugar
  • 160ml (2/3 cup) fresh orange juice
  • 80ml (1/3 cup) water
Instructions:
  • Preheat the oven to 200°C, then lightly grease twelve 80ml (1/3-cup) capacity muffin pans with cooking spray.
  • In a bowl, mix together icing sugar, margarine, almond meal, flour, egg whites, and orange rind until just combined. Spoon the batter into the prepared pans. Bake for 25 minutes or until a skewer comes out clean when inserted into the centers. Allow to cool in the pans for 5 minutes, then transfer to a wire rack to cool slightly.
  • To prepare the orange syrup, zest the orange with a zester or peel the rind with a vegetable peeler. Remove the pith, then thinly slice the rind. Combine the orange zest, sugar, orange juice, and water in a saucepan over low heat until the sugar dissolves. Increase heat, bring to a boil, and cook without stirring until slightly thickened, about 2 minutes.
  • Serve the orange & almond friands on plates and top with warm orange syrup for a delightful touch.
