Delicious orange almond syrup puddings for a stunning dessert.
Ingredients:
  • 133.00 gm almond meal
  • 322.50 gm caster sugar
  • 2.00 gm baking powder
  • 250g thick vanilla yoghurt, to serve
  • 2 medium oranges, scrubbed, quartered
  • 4 eggs
  • 196.88 gm orange juice
Instructions:
  • 1. Preheat your oven to 180C (356F) or 160C (320F) fan-forced. 2. Grease six 3/4-cup muffin tins and line the base of each with a baking paper disc. 3. Arrange the oranges in a single layer in a microwave-safe dish. 4. Cover the dish and microwave on high for 8 minutes or until the oranges are very soft. 5. Remove the cover and allow the oranges to cool until they are easy to handle.
  • Remove and discard the seeds, leaving the peel on the orange. Transfer the orange and its juice to a food processor and puree until smooth.
  • Combine the eggs, almond meal, sugar, and baking powder in a food processor and blend until smooth. Divide the mixture evenly among the tins. Bake for 35-40 minutes, until lightly browned and the centers are just set. Let them cool in the tins for 5 minutes. Loosen the puddings with a knife, place a board or rack over the tin, and swiftly invert to release the puddings.
  • Prepare the syrup by gently combining the sugar and juice in a small saucepan over low heat until the sugar dissolves. Allow it to come to a boil and simmer without stirring for 6 minutes until it reaches a syrupy consistency (it will thicken as it cools).
  • Drizzle syrup over the puddings and serve with yogurt.
