Microwave orange and almond syrup cake

Satisfy your sweet tooth fast with this easy microwave cake recipe.
Ingredients:
  • 112.50 gm self-raising flour
  • 107.50 gm caster sugar
  • 50.00 gm almond meal
  • 65.63 gm orange juice (see note)
  • 36.80 gm vegetable oil
  • 1 egg, lightly beaten
  • 64.38 gm milk
  • Double cream, to serve
  • 262.50 gm orange juice
  • 70.95 gm caster sugar
Instructions:
  • Prepare a 7cm-deep, 8cm x 19cm microwave-safe silicone loaf pan by greasing it and lining the base and sides with baking paper.
  • In a bowl, mix flour, sugar, almond meal, orange juice, oil, egg, and milk. Pour the mixture into a prepared pan. Microwave on HIGH for 6 to 7 minutes until the top is firm to the touch.
  • To prepare the Orange syrup, in a saucepan over medium heat, gently mix together the orange juice, sugar, and 2 tablespoons of cold water. Bring the mixture to a gentle simmer, stirring occasionally. Let it simmer for 2 minutes.
  • Place the cake on a wire rack lined with baking paper over a tray. Drizzle half of the syrup over the cake. Enjoy the warm cake with the rest of the syrup and a dollop of cream on top.
