Create moist citrus muffins by mixing craisins, orange juice, and zest.
Ingredients:
  • 375.00 ml craisins (dried cranberries)
  • 131.25 gm fresh orange juice
  • 2 tsp orange rind, finely grated
  • 300.00 gm self-raising flour
  • 107.50 gm caster sugar
  • 75.00 gm rolled oats
  • 193.13 gm milk
  • 150g butter, melted and cooled
  • 2 eggs
  • Icing sugar, to dust
Instructions:
  • Preheat oven to 190C (170C fan). Line a 12-hole medium muffin tin with paper cases. Mix Craisins, juice, and rind in a bowl and let it sit for 20 minutes.
  • In a large bowl, mix flour, sugar, and 1/2 cup oats. Create a well in the center. In a separate container, whisk eggs, milk, and butter. Pour the wet ingredients into the dry ones. Reserve 1/4 cup of soaked Craisins, then add the rest along with the juice to the bowl. Gently fold everything together until well combined.
  • Fill paper cases with the mixture. Top with a mix of reserved oats and Craisins. Bake for 25-30 mins until golden brown and springy to the touch. Let them sit in the tins for 5 mins, then transfer to a wire rack to cool. Dust with icing sugar before serving.
