Tasty orange currant muffins, ready in just 40 minutes.
Ingredients:
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1/4 cup frozen (thawed) orange juice concentrate
  • 2 teaspoons grated orange peel
  • 1 egg, slightly beaten
  • 2 1/4 cups Gold Medal™ all-purpose flour
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup currants or raisins
  • 3 tablespoons sugar
  • 1 teaspoon grated orange peel
Instructions:
  • Preheat oven to 400°F. Grease only the bottoms of 12 medium muffin cups (2 1/2x1 1/4 inches) or line with paper baking cups.
  • In a large bowl, combine milk, oil, orange juice concentrate, 2 teaspoons orange peel, and egg until incorporated. Add flour, 1/2 cup sugar, baking powder, and salt; stir until just moistened (batter will be lumpy). Gently fold in currants. Divide batter evenly into muffin cups. Mix 3 tablespoons sugar with 1 teaspoon orange peel and sprinkle over the batter.
  • Bake until light golden brown, then promptly remove from pan.
