Quick and zesty glazed carrots with orange and nuts. Ready in 20 minutes!
Ingredients:
  • 1 lb ready-to-eat baby-cut carrots
  • 1/4 cup slivered almonds
  • 1/3 cup orange marmalade
  • 1/2 cup golden raisins
Instructions:
  • In a 2-quart saucepan, bring 1/2 cup water to a boil. Add carrots and bring back to a boil. Reduce heat to medium, cover, and cook for 10 to 12 minutes, stirring occasionally, until tender.
  • In an 8-inch nonstick skillet, spread almonds in a single layer and cook over medium-high heat for 4 to 7 minutes, stirring constantly until lightly browned.
  • After draining the carrots, place them back in the saucepan. Add marmalade and raisins, then cook over low heat for 1 minute, stirring constantly until the marmalade is melted. Lastly, gently fold in the almonds.
