Enhance baby carrots with tangy citrus and spicy glaze for a quick and delicious side dish.
Ingredients:
  • 1 bag (1 lb) ready-to-eat baby-cut carrots
  • 1/2 cup orange juice
  • 3 tablespoons butter
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin or cinnamon
  • 2 tablespoons chopped fresh parsley leaves
Instructions:
  • In a 10-inch skillet, bring all ingredients (excluding parsley) to a boil over medium heat. Cover, reduce heat, and simmer for 7 to 9 minutes, or until the carrots are just tender. Sprinkle with fresh parsley before serving.
  • Uncover the skillet and gently stir in the carrots. Let it simmer for about 2 minutes more until the liquid reduces to about 1 tablespoon and the carrots have a glossy look. Remove from heat and garnish with fresh parsley.
