Delicious Italian sausage-spiced baby back ribs coated in a spicy, sweet, and tangy orange glaze. Perfect for game day or a potluck!
Ingredients:
  • 2 racks baby back ribs, trimmed
  • Spice rub:
  • 1 tablespoon fennel seeds
  • 1 tablespoon ground black pepper
  • 1 tablespoon white sugar
  • 1 tablespoon garlic salt
  • 1 tablespoon kosher salt
  • 0.5 teaspoon cayenne pepper
  • Glaze:
  • 0.33333334326744 cup brown sugar
  • 0.33333334326744 cup orange juice
  • 0.33333334326744 cup rice wine vinegar
  • 1 tablespoon orange zest
  • 2 teaspoons hot chile paste, or to taste
Instructions:
  • Preheat your oven to 275 degrees F (135 degrees C) and prepare a baking sheet by lining it with aluminum foil.
  • In a small bowl, mix fennel seeds, black pepper, sugar, garlic salt, kosher salt, and cayenne pepper until well combined.
  • Lay the rib racks on the baking sheet; score the membrane on the backs of the ribs with a sharp paring knife. Massage both sides of the ribs with the fennel seed mixture.
  • Roast in the oven until tender, flipping halfway through, for a total of 2 1/2 to 3 hours. Let cool for 1 hour before serving.
  • In a saucepan over medium heat, whisk together brown sugar, orange juice, vinegar, orange zest, and hot chile paste. Let it boil, then lower the heat and simmer until it's reduced by half, approximately 5 minutes.
  • Preheat oven to 425 degrees F (220 degrees C) and cover a baking sheet with aluminum foil.
  • Cut the rib racks into individual ribs and coat them thoroughly with the glaze in a large bowl. Place the ribs on the prepared baking sheet and save any extra glaze in the bowl for basting.
  • Place the glazed ribs in the oven for 5 minutes. Then, flip them over, brush with the rest of the glaze, and continue baking until they are golden brown, for about 5 to 10 minutes.
