Ingredients:
  • 4 egg yolks, lightly whisked
  • 55g (1/4 cup) caster sugar
  • 60g (3 tbsp) unsalted butter, cubed
  • 125mls (1/2 cup) orange juice (about 2 oranges)
  • 4 oranges, peeled, white pith removed
  • 1 125g box Parisienne biscuits (Unibic brand)
  • Icing sugar, to dust
Instructions:
  • In a small heavy-based saucepan, gently heat yolks, sugar, butter, and juice together until the butter melts and the mixture thickens; stir constantly for 7-10 minutes.
  • Carefully cut out the orange segments with a sharp knife, staying close to the white membranes. Plate the segments alongside a few biscuits. Top with warm orange curd, sprinkle with icing sugar, and enjoy.
