Sweet, vibrant blood oranges elevate desserts and drinks with their stunning magenta flesh, perfect for citrus lovers.
Ingredients:
  • 3 large eggs
  • 3 egg yolks
  • 0.33333334326744 cup white sugar
  • 1 tablespoon white sugar
  • 0.25 cup fresh blood orange juice
  • 2 tablespoons finely grated blood orange zest
  • 1 tablespoon coconut juice
  • 1 stick unsalted butter, softened and cubed
  • 1 teaspoon vanilla extract
  • 1 drop red food coloring, or as desired
Instructions:
  • In a large metal mixing bowl, vigorously whisk together eggs, egg yolks, 1/3 cup plus 1 tablespoon sugar, blood orange juice, blood orange zest, and coconut juice until well combined.
  • 1. Bring a pot of water to a simmer, then set a metal mixing bowl with the curd on top to create a double boiler. Cook and stir the curd until it thickens, about 6 to 10 minutes. 2. Remove from heat and whisk in the butter until smooth. Stir in the vanilla extract, then add and mix in the food coloring.
  • Strain the curd through a fine mesh sieve into ramekins or a bowl. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
