Spicy chipotle enhances creamy, cheesy corn casserole with hash browns.
Ingredients:
  • 2 eggs, beaten
  • 0.5 cup BREAKSTONE'S or KNUDSEN Sour Cream
  • 0.5 cup whole milk
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon chipotle chile pepper powder
  • 4.5 cups ORE-IDA® Shredded Hash Brown Potatoes, thawed
  • 1 (14.75 ounce) can whole kernel corn, drained
  • 1 (14.75 ounce) can cream-style corn
  • 1 cup KRAFT Shredded Sharp Cheddar Cheese
  • 0.5 cup chopped red bell peppers
Instructions:
  • Preheat oven to 375°F.
  • Combine eggs, sour cream, milk, onion powder, and chipotle chile powder in a large bowl until smooth. Stir in hash brown potatoes, whole kernel corn, cream-style corn, Cheddar cheese, and chopped peppers until fully combined.
  • Spread the mixture evenly in a 13x9-inch pan that has been coated with cooking spray.
  • Bake for 40-45 minutes until the potato mixture is hot and the top is golden brown.
