Tangy lemon drumsticks paired with rich, creamy pasta for a heavenly combination.
Ingredients:
  • 640g chicken drumstick
  • 36.40 gm olive oil
  • 2 garlic cloves, crushed
  • 125.00 ml fresh oregano leaves (see notes)
  • 30.00 ml finely grated lemon rind
  • 250g dried fusilli pasta
  • 125.00 ml frozen peas
  • 1 small carrot, coarsely grated
  • 2 green onions, thinly sliced
  • 123.75 gm mayonnaise
  • 65.63 gm lemon juice
  • Lemon wedges, to serve
Instructions:
  • Make shallow cuts on the chicken drumsticks. Combine the drumsticks with oil, garlic, oregano, and lemon rind in a glass or ceramic dish. Season generously with salt and pepper, ensuring all ingredients are well mixed. Cover the dish and refrigerate overnight, if possible.
  • Preheat your oven to 220°C/200°C fan-forced. Place chicken drumsticks and marinade in a large metal roasting pan. Roast for 30 minutes, turning halfway through until chicken is cooked through.
  • Cook pasta in a large saucepan of boiling, salted water following packet directions. Add peas for last 2 minutes of cooking. Drain, rinse under cold water, and drain well. Place pasta, carrot, and green onion in a large bowl. Combine mayonnaise, lemon juice, salt, and pepper in a small bowl. Pour over pasta mixture and toss to combine.
  • Garnish with drumsticks and lemon wedges before serving.
