Grill lamb and veggies for a delicious BBQ feast.
Ingredients:
  • 60ml olive oil
  • 60ml lemon juice
  • 40.00 ml oregano, chopped
  • 8 Lamb Loin Chops
  • 2 zucchini, thinly sliced
  • 2 Lebanese eggplants, thinly sliced
  • 2 large red capsicum, thickly sliced
  • 1 large red onion, cut into wedges
  • Oregano leaves, to serve
  • Lemon wedges, to serve
Instructions:
  • In a jug, mix 2 tablespoons of oil with lemon juice, chopped oregano, and garlic. Season to taste. Save half of the oil mixture. Place the lamb in a large dish and pour the remaining oil mixture over it. Toss to coat evenly. Let it sit for 10 minutes to marinate.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill lamb for 2-3 minutes on each side for a medium doneness or to your preference. Place the lamb on a plate, cover it with foil, and let it rest for 5 minutes before serving.
  • Combine zucchini, eggplant, capsicum, onion, and remaining oil in a large bowl, then grill for 2-3 minutes per side until lightly charred and tender.
  • Plate the lamb and vegetables, then generously drizzle the reserved oil mixture over them and sprinkle with fragrant oregano leaves. Accompany with lemon wedges for an extra burst of flavor.
