Oregon Beer Cheese Dip

Cheesy beer dip with taco seasoning, IPA, cheddar, and Swiss cheeses. Perfect for game day with pretzels, bread, or chips in 30 minutes.
Ingredients:
  • 4 tablespoons butter
  • 0.5 cup flour
  • 1 (1.12 ounce) package McCormick® Cheesy Taco Seasoning Mix
  • 1.5 cups milk
  • 1 cup beer, such as an IPA from an Oregon Brewery or your favorite local IPA
  • 2 cups shredded Mexican cheese blend
  • 2 cups shredded Swiss cheese
Instructions:
  • In a large saucepan over medium heat, melt the butter. Sprinkle in flour and Seasoning Mix, then cook and stir for 1 minute. Slowly whisk in milk and beer until smooth. Continuously stir and cook for 5 minutes until the sauce begins to thicken. Gradually whisk in cheeses until melted and smooth.
  • Pour the cheese mixture into a cozy fondue pot or slow cooker to maintain its warmth, as you prefer.
