Savor Oregon coast-inspired salmon patties, effortlessly made with canned or fresh salmon.
Ingredients:
  • 1 (14.75 ounce) can salmon
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 0.66666668653488 cup cracker crumbs, divided
  • 2 large eggs, beaten
  • 0.25 cup chopped fresh parsley
  • 1 teaspoon dry mustard
  • 3 tablespoons shortening
Instructions:
  • Strain the salmon, saving 3/4 cup of the flavorful liquid. Gently break apart the meat into flakes.
  • In a large skillet over medium-high heat, melt the butter until sizzling. Add the onion and sauté until soft and translucent.
  • In a medium bowl, mix together onion, reserved salmon liquid, 1/3 of the cracker crumbs, eggs, parsley, mustard, and salmon until well blended. Shape into 6 patties, then coat them in the remaining cracker crumbs.
  • In a large skillet over medium heat, melt the shortening. Brown the patties on both sides, flipping them carefully.
