Oreo™ Pumpkin Cream Cheese Brownie Bars

Irresistible fall dessert: fudgy brownie base, pumpkin cream cheese layer, whipped topping, and Oreo™ cookie topping.
Ingredients:
  • 1 box Betty Crocker™ Fudge Brownie Mix
  • Water, vegetable oil and eggs called for on box for cakelike brownies
  • 16 Oreo chocolate sandwich cookies, coarsely chopped (about 2 cups)
  • 1 package (8 oz) cream cheese, softened
  • 1/3 cup canned pumpkin (not pumpkin pie mix)
  • 1/4 cup sugar
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla
  • 1 container (8 oz) Cool Whip frozen whipped topping, thawed
Instructions:
  • Preheat oven to 350°F and generously coat the bottom of a 13x9-inch pan with cooking spray.
  • Prepare the brownie batter following the instructions on the box for cake-like brownies. Mix in 1 cup of chopped cookies. Spread the mixture in a pan and bake for 24 to 27 minutes or until a toothpick inserted 2 inches from the side comes out almost clean. Allow it to cool completely, which should take at least 1 hour.
  • In a medium bowl, use an electric mixer to blend cream cheese, pumpkin, sugar, pumpkin pie spice, and vanilla until smooth, scraping the sides of the bowl occasionally. Fold in 1 cup of whipped topping. Spread the mixture evenly over the crust, then top with the remaining whipped topping. Chill in the refrigerator for 2 hours before serving.
  • Before serving, generously scatter the remaining cookies over the top of the dessert. Cut the dessert into 6 rows horizontally and 4 rows vertically. Keep the dessert covered and store it in the refrigerator.
