Oreo Ultimate Turtle Cheesecake

Indulgent turtle cheesecake with Oreo crust, caramel layer, creamy filling, and decadent chocolate-caramel-pecan drizzle.
Ingredients:
  • 24 OREO Cookies, finely crushed
  • 6 tablespoons butter or margarine, melted
  • 1 (14 ounce) package caramels
  • 0.5 cup milk
  • 3 (8 ounce) packages cream cheese, softened
  • 0.75 cup sugar
  • 1 tablespoon vanilla extract
  • 3 eggs
  • 2 ounces semi-sweet baking chocolate
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • Combine crushed Oreos with melted butter until fully incorporated, then firmly press the mixture onto the base and 2 inches up the sides of a 9-inch springform pan.
  • Place caramels and milk in a microwave-safe bowl and microwave on high until caramels are fully melted and the mixture is smooth, approximately 3 minutes, stirring every minute. Add nuts, then pour half of the mixture into the crust and refrigerate for 10 minutes. Refrigerate the rest of the mixture separately.
  • Using an electric mixer, blend cream cheese, sugar, and vanilla until smooth. Gradually add eggs one by one on low speed until incorporated. Pour mixture over the caramel layer in the crust.
  • Bake in the preheated oven for 65 to 70 minutes until the center is almost set. Gently run a knife around the pan to loosen the cake, then allow it to cool before removing the rim. Refrigerate for 4 hours.
  • Microwave the caramel mixture for 1 minute until warm and creamy. Gently stir before pouring it over the cheesecake, then elegantly drizzle the melted chocolate on top.
