Whip up a tasty side dish in under 30 minutes using quick-cooking barley and orzo.
Ingredients:
  • 1 can (14 oz) fat-free chicken broth with 33% less sodium
  • 1/2 teaspoon dried thyme leaves
  • 1 cup sliced fresh mushrooms (about 3 oz)
  • 1/2 cup uncooked orzo or rosamarina (rice-shaped pasta) (3 oz)
  • 1/2 cup uncooked quick-cooking barley
  • 2 tablespoons sliced green onions (2 medium)
  • 1/2 teaspoon grated lemon peel
Instructions:
  • - In a nonstick saucepan, bring the broth, water, thyme, and salt to a boil. Add in the mushrooms, orzo, and barley, and bring back to a boil.
  • Lower the heat and cover the pot. Let it simmer gently for 15 to 18 minutes until the orzo and barley are tender and have absorbed all the liquid.
  • Mix in the fragrant onions and zesty lemon peel. Optionally, enhance with a sprinkle of freshly ground pepper to your liking.
