"Crunchy cracker-crusted chicken baked to perfection for an easy, delicious dinner."
Ingredients:
  • 1/4 cup fat-free ranch dressing
  • 3/4 cup reduced-fat crisp wheat cracker crumbs
  • 1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves
  • 1 teaspoon paprika
  • 4 skinless boneless chicken breast halves (about 1 pound)
Instructions:
  • Preheat oven to 425°F. Grease a broiler pan or baking dish with nonstick cooking spray. Pour dressing into a small bowl. Combine cracker crumbs, thyme, and paprika in a separate small bowl or plastic bag. Dip chicken breasts into the dressing, then coat with the crumb mixture. Arrange chicken on the prepared rack in the pan. Bake for 35 to 40 minutes until golden brown and juices run clear.
