Instructions:
- Preheat the oven to 400°F and generously coat the rack in a broiler pan with cooking spray.
- First, put the crushed cereal in a shallow bowl. Next, mix together the remaining ingredients, excluding the chicken, in another shallow bowl until well blended. Then, dip the chicken pieces into the egg white mixture and coat them with the cereal. Finally, arrange the coated chicken on a rack in a broiler pan.
- Bake for approximately 45 minutes or until a thermometer inserted in the center of the breast reads 170°F and at least 180°F in the thighs, legs, and wings.
