Oven-Fried Chicken with Biscuits

Easy one-dish chicken and biscuit recipe with a sweet twist of canned peaches.
Ingredients:
  • 1/2 cup Original Bisquick™ mix
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1 cut-up whole chicken (2 1/2 to 3 lb)
  • 2 1/4 cups Original Bisquick™ mix
  • 2/3 cup milk
  • 2 teaspoons chopped fresh parsley
Instructions:
  • Preheat the oven to 425°F and generously coat a 15x10x1-inch pan with cooking spray. In a shallow bowl, mix 1/2 cup of Bisquick mix with salt, paprika, and pepper. Coat the chicken with the Bisquick mixture and place it in the pan skin side down. Bake for 35 minutes.
  • Mix all biscuit ingredients in a medium bowl until a soft dough forms.
  • Arrange chicken pieces to one side of the pan and evenly place 8 (1/4-cup) spoonfuls of dough beside the chicken in a single layer. Continue baking for about 15 minutes until the biscuits turn a light golden brown and the chicken reaches the recommended internal temperature (170°F for breasts; 180°F for thighs and legs).
