Simple roasted broccolini: A nutritious, paleo, and gluten-free dish.
Ingredients:
  • 2 bunches broccolini (about 1 1/4 pound total), trimmed
  • 3 cloves garlic, minced (about 3 teaspoons)
  • 4 tablespoons extra virgin olive oil
  • Salt
  • Pepper
Instructions:
  • Prepare the roasting pan by lining it with aluminum foil and preheat the oven broiler.
  • Spread the broccolini on a pan and generously drizzle with olive oil, salt, and pepper.
  • Under the broiler, cook for 6 to 8 minutes until lightly browned and the stalks are fork tender. Remember to keep an eye on it! Serve immediately.
