Savory roasted potatoes and asparagus with garlic and fragrant herbs. Versatile casserole, perfect served hot or cold.
Ingredients:
  • 1.5 pounds red potatoes, cut into chunks
  • 2 tablespoons extra-virgin olive oil, divided
  • 8 cloves garlic, thinly sliced
  • 4 teaspoons dried rosemary
  • 4 teaspoons dried thyme
  • 2 teaspoons kosher salt, divided
  • 1 bunch fresh asparagus, trimmed and cut into 1 inch pieces
  • ground black pepper to taste
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Coat potatoes evenly with 1 tablespoon of oil, garlic, rosemary, thyme, and 1 teaspoon of salt in a spacious baking dish, then cover with aluminum foil.
  • Place in the oven that's already heated and bake for 20 minutes.
  • Combine the asparagus with the remaining 1 tablespoon of oil and the remaining 1 teaspoon of salt. Cover the mixture and cook until the potatoes are tender, approximately 15 minutes.
  • Preheat oven to 450 degrees F (230 degrees C. Uncover potatoes and bake until lightly browned, 5 to 10 more minutes. Season with pepper.
