Quick and easy cheesy skillet nachos bursting with flavor - a versatile dish ready in 20 minutes for any meal!
Ingredients:
  • 1 can (16 oz) Old El Paso™ Black Bean Refried Beans
  • 1/2 can (10 oz) Old El Paso™ Mild Red Enchilada Sauce
  • 3 cups freshly grated mozzarella, monterey jack or fontina cheese
  • 1 bag tortilla chips (thick ones work best)
  • Optional toppings: Guacamole, Pico de gallo, Fresh cilantro, jalepenos, sour cream
Instructions:
  • Preheat the oven to 375°F. In a large skillet, spread a thin layer of enchilada sauce at the bottom. Top with refried beans, season with salt and pepper if desired, and sprinkle a blend of freshly grated mozzarella and fontina cheese on top.
  • Create a delicious iteration by stacking tortilla chips and cheese three times, finishing with a sprinkle of the remaining cheese. Drizzle 2 to 3 tablespoons of enchilada sauce on top. Bake for 10 to 15 minutes until the cheese is perfectly melted and bubbly.
  • Just before serving, generously sprinkle with your preferred toppings like creamy guacamole and zesty pico de gallo. Enjoy immediately.
