Quick and easy baked cod with flavorful herbed bread crumb crust, ready in 30 minutes. Perfect with rice.
Ingredients:
  • 4 (4 ounce) cod fillets
  • 1 pinch salt and freshly ground black pepper to taste
  • 0.5 cup warm water
  • 0.5 fish bouillon cube
  • 0.75 cup dry bread crumbs
  • 0.25 cup butter, cut into small chunks
  • 1 bunch fresh parsley, chopped
  • 1 tablespoon chopped fresh dill
  • 2 teaspoons dried tarragon
Instructions:
  • Preheat the oven to 400°F (200°C). Arrange cod fillets in a baking dish and gently season with salt and pepper.
  • In a bowl, mix water and fish bouillon cube until dissolved. Pour over the cod.
  • Combine bread crumbs, butter, parsley, dill, tarragon, salt, and pepper in a bowl. Use a fork to mix until crumbly, then evenly sprinkle over the cod.
  • Cook the dish in the oven that has been preheated until the fish easily flakes with a fork and the crust turns golden and crunchy, approximately 20 minutes.
