Oven-Fried Potato Dipped Chicken

Enhance your meal with savory Cheddar mashed potatoes from Betty Crocker™ for an irresistible chicken and potato dinner!
Ingredients:
  • 2 pouches (4.7 oz each) Betty Crocker™ roasted garlic and Cheddar mashed potatoes
  • 3/4 cup plain low-fat yogurt
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/4 cup butter, melted
  • Water, butter and milk called for on potato mix pouch
Instructions:
  • Preheat oven to 400°F and generously coat a 13x9-inch pan with cooking spray.
  • Empty the contents of 1 pouch of Potatoes into a shallow dish. In another shallow dish, place the yogurt. Coat the chicken with yogurt, then coat it with the dry potatoes. Transfer the chicken to a pan and drizzle with melted butter.
  • Bake for 25 to 35 minutes until the chicken reaches at least 165°F and the crust turns a beautiful golden brown.
  • Prepare the second pouch of potatoes according to the package instructions using water, milk, and butter. Serve the chicken with the mashed potatoes.
