Elevate any dish with gourmet flair by incorporating oven-roasted tomatoes.
Ingredients:
  • 12 ripe medium egg tomatoes
  • 13.80 gm extra virgin olive oil
  • 4.80 gm sea salt
  • 2 tsp dried oregano
Instructions:
  • Prepare two trays lined with non-stick baking paper with wire racks on top. Preheat the oven to 100°C. Halve the tomatoes lengthwise and arrange them cut-side up on the racks.
  • Coat the tomatoes' cut side with the oil.
  • Enhance tomatoes with a sprinkle of sea salt and oregano. Roast in a preheated oven, rotating trays midway, for 4-4 1/2 hours until tomatoes shrink, slightly shrivel, and reduce by half. (Cooking time may vary based on tomato size.)
  • Take the tomatoes out of the oven and let them cool on the racks. Store in the fridge in an airtight container with layers separated by non-stick baking paper.
