Enhance oven-roasted tomatoes with balsamic vinegar, thyme, garlic, and oregano for a divine burst of flavor.
Ingredients:
  • 1kg tomatoes, quartered
  • 6 sprigs fresh thyme
  • 6 sprigs fresh oregano
  • 3 garlic cloves, unpeeled
  • 36.40 gm extra virgin olive oil
  • 40.00 ml balsamic vinegar
  • 8.00 gm brown sugar
Instructions:
  • Preheat your oven to 220C (200C fan-forced) and line a shallow roasting pan with baking paper.
  • Arrange the tomato halves in the baking pan cut-side up. Sprinkle with thyme, oregano, garlic, drizzle with oil, vinegar, and sugar. Season generously with salt and pepper. Roast in the oven for 15-20 minutes until slightly softened. Turn off the oven and let the tomato cool inside for 20 minutes.
  • Place the flavorful blend of tomatoes, garlic, and balsamic vinegar in a sealed container. Chill in the refrigerator for a maximum of 3 days to enhance the delicious flavors.
