Overnight French Toast Casserole

French toast caramel roll casserole: a delicious and convenient breakfast hybrid!
Ingredients:
  • 3 tablespoons butter, melted
  • 1 cup packed light brown sugar
  • 1 1/2 cups 1% milk
  • 1 tablespoon vanilla
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon salt
  • 8 eggs, slightly beaten
  • 1 loaf (1 lb) unsliced French or Italian crusty bread, cut into 1-inch cubes (about 16 cups)
  • 1/4 cup pecans, chopped
  • Maple syrup, if desired
Instructions:
  • Prepare the 13x9-inch (3-quart) baking dish by spraying it with cooking spray. In a small bowl, combine the butter and brown sugar mixture, then spread it evenly in the baking dish.
  • Combine milk, vanilla, cinnamon, ginger, salt, and eggs in a large bowl and whisk until smooth. Add bread cubes to the mixture and carefully stir to combine. Transfer the mixture to a baking dish over the brown sugar layer. Top evenly with pecans.
  • Chill, covered, for at least 1 hour, but no more than 12 hours.
  • Preheat the oven to 350°F. Let the baking dish sit uncovered for at least 10 minutes while the oven preheats. Bake for 25 to 30 minutes until the top is golden brown.
  • Take the baking dish out of the oven. Place a heatproof serving plate or tray upside down on top of the baking dish. Carefully flip the plate and baking dish over together. Let the baking dish rest on the rolls for 1 minute, then remove it. Use a rubber spatula to scrape any caramel left in the dish, spread it over the French toast bake. Serve warm with a drizzle of maple syrup.
