Transform your boring morning oatmeal into delicious sugar-free overnight oatmeal pancakes!
Ingredients:
  • 3 cups skim milk
  • 3 tablespoons lemon juice
  • 2 cups rolled oats
  • 3 large eggs
  • 0.5 cup whole wheat flour
  • 1.5 teaspoons baking powder
  • 0.25 teaspoon vanilla extract, or more to taste
  • 1 pinch ground cinnamon, or more to taste
  • 1 pinch ground cloves, or more to taste
Instructions:
  • Combine milk and lemon juice in a bowl; let it sit until the milk slightly sours, approximately 10 minutes. Mix in oats, cover, and refrigerate for 8 hours to overnight.
  • Blend together eggs, flour, baking powder, vanilla extract, cinnamon, cloves, and salt with oats until batter is uniformly mixed.
  • Preheat a lightly oiled griddle over medium-high heat. Spoon batter onto the griddle, cook until bubbles form and edges are dry (3 to 4 minutes), then flip and cook until browned on the other side (2 to 3 minutes). Repeat with the rest of the batter.
