Savory oyster stuffing adds a delicious twist to classic Thanksgiving fare.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 8 cups dry bread crumbs
  • 2 tablespoons chopped fresh parsley
  • 3 cups oysters, liquid reserved
  • 3 large eggs, beaten
  • 1.5 teaspoons salt
  • 1 teaspoon poultry seasoning
  • 0.5 teaspoon dried thyme
Instructions:
  • Assemble all your ingredients.
  • Preheat the oven to 325 degrees F (165 degrees C) and prepare a 2-quart casserole dish by greasing it.
  • In a large skillet over medium-high heat, sauté celery and onion in oil until tender, approximately 5 minutes.
  • Combine bread crumbs and parsley into the mixture off the heat. Incorporate oysters and eggs; season with salt, poultry seasoning, thyme, and pepper. Add a sufficient amount of oyster liquid to blend everything together evenly.
  • Pour the mixture into the ready casserole dish.
  • Bake in the preheated oven for about 45 minutes until the top is golden and a knife inserted in the center comes out clean.
