Oyster Fritters

Game Day or patio party? Try these crispy fried oysters with spicy aioli for the perfect crowd-pleaser.
Ingredients:
  • 1 cup mayonnaise
  • 1 teaspoon grated lemon peel
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon finely chopped pickled sliced jalapeño chiles
  • 2 tablespoons chopped fresh cilantro
  • 1 3/4 cups Gold Medal™ all-purpose flour
  • 1/3 cup yellow cornmeal
  • 2 teaspoons grated lemon peel
  • 1 teaspoon salt
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1 cup lager beer
  • 1/4 teaspoon freshly ground black pepper
  • 2 pints shucked oysters, drained
  • Peanut oil for deep frying
Instructions:
  • Combine the aioli ingredients in a small bowl and chill in the fridge until ready to serve.
  • Combine 3/4 cup of flour, cornmeal, 2 teaspoons of lemon peel, 1/2 teaspoon of salt, and red pepper in a large bowl. In a separate small bowl, whisk together beer and egg. Gently mix the beer mixture into the flour mixture until fully combined. Cover and let the batter rest at room temperature for 1 hour.
  • Heat 2 inches of oil in a deep fryer or heavy saucepan to 350°F. Line a 15x10x1-inch pan with paper towels and place a wire cooling rack on top.
  • Combine the remaining 1 cup flour, remaining 1/2 teaspoon salt, and black pepper in a shallow dish. Coat the oysters in the flour mixture first, then in the beer batter, shaking off any excess batter.
  • Carefully place oysters into the hot oil, frying them in 6 batches for about 2 minutes until they turn golden brown. Let them drain on a rack in a pan and enjoy the fritters hot with aioli.
