Ingredients:
  • 200g packet dried flat egg noodles
  • 18.20 gm peanut oil or rice bran oil*
  • 1 onion, sliced
  • 300g oyster mushroom*, torn in half if large
  • 100g enoki mushrooms*, trimmed
  • 2 garlic cloves, crushed
  • 1 bunch gai lan (Chinese broccoli), trimmed, roughly chopped
  • 60ml soy sauce
  • 60ml lime juice
  • 2 spring onions, thinly sliced, to serve
Instructions:
  • Prepare the egg noodles as instructed on the package. After draining, rinse under cold water and drain thoroughly. Mix with 1 teaspoon of oil and 1/2 teaspoon of black pepper for a flavorful finish.
  • Heat the rest of the oil in a spacious wok on high heat. Stir-fry the onion for 1 minute. Add the mushrooms and garlic, stir for 1 minute, then toss in gai lan, soy sauce, and juice, continuing to stir-fry for another minute. Mix in the noodles and use tongs to toss for 1-2 minutes until heated. Serve with a sprinkle of spring onions.
